1. Preheat oven to 400°F.
2. Rub turkey pieces with olive oil and season generously with salt and pepper.
3. On a cookie sheet with a wire rack, place turkey on the middle rack of oven, roast for 30 minutes, then reduce temperature to 325°F until internal temperature reaches 165°F.
4. Remove turkey from oven and allow it to rest for 30 minutes with tent foil on top.
5. Slice turkey into 1-inch thick slices, serve on your favourite platter.
