These crispy empanadas are stuffed full of a mild chipotle braised shredded pork, potatoes, caramelized onions and Monterey Jack. Served with a side of house-made Chimichurri Sauce.

Empanadas: flour, salt, baking powder, shortening, pork, potatoes, red peppers, onions, garlic, cilantro, cumin, coriander, Monterey Jack cheese, orange, lime, canola oil, chipotle peppers
Chimichurri Sauce: Olive oil, parsley, lime juice, white wine vinegar, oregano, garlic, salt, chili flakes

Preheat oven to 425°F. Remove lid, bake on the middle rack until heated through, about 12 – 15 minutes.
